Delicious Cheesy Spinach
Orzo Recipe



This orzo recipe is probably the all-time favorite for both of us as it is filling, creamy, and delicious. Serve it with a side of baked chicken and you'll have checked off all four food groups!

By the way, if you're wondering what orzo is, it's a type of pasta that is shaped similarly to rice, but is just a bit bigger. You can find it in most grocery stores in the pasta section, but look for it in a smaller, clear bag (not in a box like most other pasta comes packaged in). If you can't find it, risotto pasta will also work.

Here is a picture of when I made this recipe recently:

cheesy spinach orzo recipe

-1 cup (dry) orzo
-2 cups chicken broth
-1 carrot, finely chopped
-5 cloves of garlic, finely chopped
-1 Tbsp margarine
-2 cups spinach, chopped
-1/2 cup black olives, chopped
-1 cup cheddar cheese, grated or cubed
-1 Tbsp parmesan cheese (optional, for garnish)

1. Sauté the carrot and garlic in margarine over low heat for about 2 minutes, or until the garlic turns golden and the carrots are a bit soft.

2. Add the chicken broth, spinach, and orzo. Stir well and bring to a boil.

3. Cover and simmer on low heat for about 20 minutes (or until most of the broth has been absorbed). Stir every couple of minutes as the orzo tends to stick to the bottom of the pot a bit.

4. Remove from heat. Stir in cheese and olives. Let sit for 1 minute or until the cheese melts.

5. Serve and garnish with parmesan cheese (if desired).

(6. Andrew likes to top his orzo with Ketchup... as he likes to do with most of my recipes... maybe it's a guy thing?!)

Makes about 4 servings

Tip: If you know you'll be in a hurry when preparing this, try to prepare as much as you can the day before and leave it in the fridge (wash and chop up the carrot, garlic, spinach, olives, and cheese, mix up the broth, etc). Then all you have to do is throw it together in 20 minutes).
