Salmon Recipes & Tips



When I was first learning to cook, I mostly shied away from making salmon recipes. After all, who wants to handle a dead, cold, slimy fish, right? Not I... Gross-me-out!

But after being reminded of how good salmon is for you (high in protein, rich in omega-3-fatty-acids, etc), and how great it tastes, I decided to explore the fishy world of salmon recipes.

What I discovered is that it's really not as difficult (or as gross) as it seems, and that there are a lot fewer steps to making it than some other recipes I like to make, such as Pad Thai. So without further ado, here's my favorite easy salmon recipe to date:

salmon-sauce -200 gram piece of salmon (approx)
-3 Tbsp low-fat mayonnaise
-2 Tbsp ketchup
-1 Tbsp grated parmesan cheese
-1 tsp worchestire sauce (optional; I never use it)
-1/2 tsp olive oil


salmon-pre-cook 1. Preheat oven to 200 degrees C (392 F)

2. Grease baking sheet with olive oil and place salmon in the centre of the baking sheet (if your salmon piece has skin on it, make sure it's skin-side-down)

3. Put the mayonnaise, ketchup, (optional worchestire sauce), and parmesan cheese in a small bowl and mix well. The resulting mixture should be a rosy color... add more ketchup if it's too light

salmon-in-oven 4. Spread the sauce mixture over top of salmon

5. Bake about 25 minutes or until sauce turns a darker orangey color

6. Serve with brown rice and salad on the side (if desired)

Voila... the finished product!


Tips:

1. I usually buy one big salmon steak (approximately 200 grams), prepare it as per the salmon recipe above, then cut it in half right before serving it (half for him, half for me). This is a bit less mess than cooking two individual pieces, but it works well either way.

2. Some of the sauce will slip off the side of the salmon as you're coating it (before baking). Just use a spoon to scoop it up from the baking sheet back onto the salmon as best you can.

3. Soak the baking sheet in hot water and soap as soon as you've served the salmon as it will be MUCH easier to wash later.
